I'm so excited to be working with Newcastle Building society on a series of Vlogs about saving money in the kitchen, this first video shows my ultimate time saver, cheap, nutritious and super quick tea. Perfect for a rushed evening or a late dinner, we all know how that feels? Starving kids and after school club means you aren't home until 6 or later and there is nothing ready, well worry no more this recipe is super simple, quick and cheap! This recipe has never failed to provide clean bowls and the kids actually regularly ask for 'noodle doodles' so it must be a winner!

Delicious hot or cold, Pasta Frittata is a great way of using up leftover pasta and it’s super quick to make!!!
ReplyDeleteIngredients:
4 large free-range eggs
40 g Parmesan cheese , plus extra to serve
sea salt
freshly ground black pepper
400 g leftover cooked pasta
extra virgin olive oil
Preheat the oven to 200°C/400°F/gas 6. Beat the eggs in a large bowl, then finely grate in the Parmesan. Season with a little salt and a good twist of pepper. Whisk well, then stir in your pasta.
To cook the frittata, heat 3 tablespoons of oil in a 26cm non-stick ovenproof frying pan over a medium heat. Add the frittata mixture and cook for about 5 minutes, or until crisp underneath, then place in the oven for another 5 minutes, or until firm. Carefully flip the frittata onto a large plate, then slide it back into the pan and return it to the oven for a further 5 minutes, or until crisp underneath. Serve with an extra grating of Parmesan.
If you’ve got about 400g of leftover cooked pasta that is already coated in sauce, you can swap that in for an easy twist on my basic recipe. Or try making a pizzaiola pasta frittata – make the basic pasta frittata (I like to use fusilli, but use whatever shape you have), then serve by slicing and layering over 6 ripe cherry tomatoes and 40g of fontina cheese. Scatter over a few fresh basil leaves, and finish with an extra grating of Parmesan.

ReplyDeletePasta is always super cheap and super quick to prepare. I always make it with fresh tomatoes and basil -- and depending on time, and what's in the fridge, I'll also add lots of other veg too xx
ReplyDeleteStir fry. Cook and drain dried noodles. Heat up left over or frozen vegetables (can add meat if you want) in a wok. I like to make a sauce with soy sauce, orange juice, and ginger. Quick, easy, and a great way to prevent food waste.

ReplyDeleteI usually just get some koka noodles (20p in home bargains), a jar of hot dogs (less than £1) and cook both and mix them together. Cheap, quick and tasty! :)

ReplyDeleteI love fajitas as a fast, money-saving meal. I use chicken and veg you cook straight from frozen too.
It has to be a stir fry for me. Instead of buying the stir fry veg bags, I buy the veg separately and prepare them, then mix together and freeze in portions. Means we always have something quick and easy in the freezer to cook, and it's more economical than buying the bags of pre-prepared veg!

ReplyDeleteFor a fast and budget friendly meal, my boys love muffin pizzas. An English muffin sliced in two, a bit of tomato puree and cheese, toasted under the grill and hey presto.

ReplyDeleteMy superfast budget meal idea is an omlette with any left-overs in the fridge. I put in any left over meat, cooked potatoes, mushrooms, tomatoes, spring onions, peppers, in fact anything, which makes it different every time. To add some extra vegetables, I serve it with tinned sweetcorn, simple!

ReplyDeleteChilli which I make in my Slow Cooker. It may not be super fast but its quick to prepare and then I can just leave it cooking all day without having to worry about what to cook for dinner. I look for mince on offer and the remaining ingredients are cheap as chips. Padding the meal out with rice/baked potato makes the meal go further and fills you up. I also always have enough leftover to freeze so I have a ready meal for those days when I just don't want to cook.

ReplyDeleteI shop at Aldi and I find spaghetti and meatballs a quick and cheap meal. Their pack of 12 meatballs are £1.68, a pack of spaghetti is 20p and their pasta sauce is either 38p or 48p (I think). I usually add some dried herbs and garlic powder to the sauce and this dinner easily feeds 4 grown ups.

ReplyDeleteA super fast and tasty meal for all the family is Batchelors beef noodles which take around 4 mins to cook ( I usually add an Oxo cube to add a more beefy taste ) When done mix in a couple of slices of corned beef. A really delicious quick meal/snack. A little tip don't throw away the water based mix the noodles cooked in it makes for lovely gravy, to add to another quick snack you make. :)
